Salmon Burger Three Ways

Ingredients:
1 lb skinless, boneless salmon
1 teaspoon Dijon Mustard
1 tablespoon drained, chopped capers
2 tablespoon chopped fresh dill
1 egg lightly beaten
1/4 teaspoon garlic powder
juice of 1/2 lemon
Salt and pepper to taste
1/2 cup panko or bread crumb (for a gluten free version, you can use oat flour)
Procedure:
1. With a sharp knife, chop the salmon very small.
2. In a glass bowl, mix well all ingredients together.
3. Refrigerate for 30 minutes.
4. In the meantime, prepare your burger toppings: lettuce, red onions, avocado, Mozzarella cheese, grilled veggies, tartar sauce, or any other topping of your preference.
5. Shape the salmon mixture into four burgers.
6. Bring a non-stick skillet to medium heat. Add a drizzle of olive oil and cook the burgers, allowing them to firm up on the first side, about 4-5 minutes. Turn them over and finish cooking for another 4 minutes.
7. Serve on a bed of greens or on buns or plain with grilled veggies, with the toppings or any dressing of your choice.
