Ingredients
3 cups white flour 390g
1/2 cup coconut oil 90g
4 tsp baking powder 25g
1 tsp vanilla bean powder 3 g
1/4 tsp salt sea salt 1g
1/3 cup white granulated sugar 65g
1/2 cup plain vegan yogurt 143g
1/2 cup plus 1 tbsp soy milk
1 tbsp apple cider vinegar 9g
Place the milk and yogurt in a cup and stir to combine. Add the vinegar, mix and set aside. To a bowl add the flour, baking powder,soda, vanilla bean powder, sugar, and salt. Whisk until incorporated. Chop up the frozen coconut oil in small pieces and add it to the flour mixture. Use your hands to mix the flour and oil together to make a sandy mixture. Now add the milk stirring with a spoon until it comes together as a dough. use your hands knead the dough gently until you get an even consistency. Don’t overwork the dough. You will notice some coconut oil chunks in the dough. Don’t worry about that.
Place dough on parchment paper and roll it out about 1 inch thick and fold it on itself like a book. Turn and repeat this process about 5 times. This is to create layers. See video.
Wrap dough in plastic wrap and place in the fridge for 15 minutes. Remove and roll out the dough about an inch thick. Using a cookie cutter cut out circles. Place them inside the freezer for 15 minutes. Remove and sift each scone with flour. Place on a baking tray and position each scone very close to one another.
Bake for 25 minutes at 200 degrees Celsius.
